Melomels are a variety of mead that use fruit to compliment the honey base.
PROCESS
We make our mead by combining Alberta clover honey, a portion of malt, and some hops with water in our kettle. This mixture is brought to a boil. Once boiled it is cooled and fermented. Raspberries are added and the mead is aged, filtered, and packaged.
Our Mead is a melomel, which is a variety of mead that uses fruit to compliment the honey base. Common varieties of melomels include: apple (called a cyser), apricot, peach, melon, raspberry, blackberry, strawberry, blackcurrant, lemon and grapes (called a pyment).
